Industry Guides to Good Hygiene Practice

The revised Food Industry Guide to Good Hygiene Practice: Retail is now available from The Stationery Office (TSO). Produced by the retail trade, it sets out recommendations that will help meet the legal obligations to ensure food safety and is recognised by the Food Standards Agency.

The main aim of the guide is to provide easy to understand and practicable advice on the best ways of complying with Regulation (EC) No 852/2004 as well as the national provisions of The Food Hygiene Regulations 2006. The use of this guide is optional and food business operators can choose to show comply in other ways. However, the Agency hopes it will prove useful to assist food retailers in meeting legal food hygiene obligations, as well as ensuring that high standards are achieved in food safety.

Use of the Guides are voluntary and there is no legal requirement for food businesses to follow the advice contained in them. Businesses may demonstrate compliance with the hygiene legislation in other ways. However, enforcement authorities are obliged by law to give due consideration when carrying out food hygiene inspections and, as such, the Guides contribute to the consistent application and enforcement of food law.
